I recently found that my local Trader Joe's started carrying gluten-free fettuccine in the refrigerated section and this made me want some alfredo stat. That really rich and creamy kind, you know what I'm talking about. I briefly considered getting a jar of alfredo sauce, but let's face it, the store bought alfredo sauces are just icky and taste bland. After a little more research, I realized that alfredo sauce itself is quite easy to make from scratch. I thought I'd put a little twist on it to experiment with some flavors not traditionally used--and the result was delicious! Of course there are many modifications you could make with this recipe, so know that it is quite ... Read the Post

Friday Favorites
Happy Friday!! I've decided to start a Friday Favorites series that will highlight my top 3 things from the past week. A heads up they will most likely be random and across a variety of categories because that's just kind of how my life is these days. 1. These veggie muffins from Costco. They were being sampled last weekend and tasted surprisingly good! I immediately thought they would be a great food for Ollie to work on eating solids and get more veggies, and I was right. These are kind of like those veggie muffins you see on pinterest, except you don't actually have to spend much time in your kitchen to make them. Nothing against doing that, but working full time/Mothering does not ... Read the Post
Finding the Balance of Motherhood
Motherhood—for me it has been a constant balancing act. Balancing between the most overwhelming love I have ever felt and feeling like I’ll never get a minute alone again. A balance between figuring out why your baby is crying and how to make him giggle again. A balance between loving my body for giving life to another human and trying to accept how my body has changed. A balance between wanting to return to my day job to feel like “an adult” again and counting down the minutes until I leave my job to get home to that sweet baby. A balance between wanting to have a home cooked meal but also wanting to spend every waking minute playing with your baby (hint: babywearing is a solution to this ... Read the Post
Easy Breakfast Casserole
Breakfast is easily one of my favorite meals of the day. If I had to choose a meal to sit down and savor, it would be breakfast. Actually, before I had Oliver, I would sit down to eat breakfast every day. It was a great ritual to try to eat mindfully, read my favorite blogs, and prepare myself for the day ahead. But I'm really not a morning person, so it has always been a struggle for me to cook in the mornings. Now throw a baby in the mix and my mornings are typically chaotic and I'm lucky if I get to eat a whole meal without getting up three times. A few years back I started making a breakfast casserole and it has been such a LIFESAVER lately. I make it on Sunday afternoons and then we ... Read the Post
Why I’m starting to blog
For a while now I have wanted to start a blog. I love reading other blogs and have always felt that I would love the world of blogging. I’ve tossed the idea around for a few years, discussed it with friends, coworkers, and my husband--always receiving positive feedback and words of encouragement. But something always stopped me from going forward with a blog. Now I am able to reflect back on it and realize that what stopped me was most likely some combination of doubt, perfectionism and just plain fear. Fear of what it would be like, fear of the unknown, and fear of what seems to be taking such a great risk. Lately, blogging has been on my mind even more than it used to be, as I’ve ... Read the Post
